Weekend of skiing and a little love mixed in..

Friday we headed up to a friends cabin at White Pass to spend the long weekend. Brian and Sara were on the calendar to host this months Supper Club and decided to invite everyone up to their family's cabin and host Supper Club there. We arrived at the cabin late Friday evening, popped in a pizza and caught up with Brian and Sara. After a late breakfast on Saturday, we headed up the mountain for some cross country skiing. We enjoyed a few hours of skiing and lunch on the trail, and then headed to the car for some Almond Champagne. This should become a tradition, it is the best treat after skiing 6 miles!!

A few others arrived Saturday afternoon for the Supper Club dinner. Sara went all out and even made place cards and gave each of us a menu! Dessert was my favorite, Sara made an apple tart as well as some decadent chocolate truffles that were to die for!

On Sunday (Valentine's Day) we woke up and Drew made a delicious breakfast casserole and Sara made pink heart shaped pancakes - per my request :D

Needless to say, I was a happy girl! It was a fun weekend and I'm glad we were able to spend it with friends!

Remember how much snow we had last year when we visited Sara's Family cabin?

Well look how little we had this year...


El Nino much? So weird, but not to worry we had plenty of snow up on the mountain for Cross Country Skiing!

We are spending the long weekend at White Pass doing some cross country skiing with a few friends. I'm trying to convince our gracious hosts to make these heart pancakes on Sunday, hopefully my Valentine's Day plan works...

Super Bowl Eats

Because lets face it, we're I'm basically there for the commercials and food! Although I've already committed to making Slow Cooker Turkey Chili for a friends Super Bowl party, I was telling my sister yesterday that I think this recipe would make for a perfect Super Bowl Sunday Party. She agreed and might use it for her Super Bowl Party. My neighbor gave me this recipe last year and it is just so easy, maybe I should rename it.

Drew's Easy Peasy Slow Cooker Pulled Pork

4lbs Pork Shoulder
1 Onion chopped
2 Cans Beef Broth
1 bottle of Sweet Baby Rays BBQ Sauce (or your favorite BBQ sauce)

{Trust me people, Sweet Baby Ray's is the best BBQ sauce for making pulled pork, perfect consistency - not too thick, not too thin.}

Place half of onions on the bottom of your slow cooker. Place pork shoulder, trimmed of any excess fat, into slow cooker on top of onions. Pour in Beef Broth. Cook over low heat for about 8 hours. Remove pork to a large bowl and shred with two forks. Transfer meat back into slow cooker and cook for a few more minutes, until meat has soaked up the sauce. Pulled pork can be held on the “warm” setting in the slow cooker for serving. Serve on soft sandwich rolls, topped with extra barbecue sauce.

I've got to pull for the Saints. I have a deep love for the city of New Orleans. That is where I met the love of my life and they make the most delicious beignets!
