Two Become One..

Garrett and I are off to Birmingham to watch two of our favorite people become husband and wife! We are so very excited to be a part of Lindsey and Justin's special day!!

Dinner Tonight :: Mexican Lasagna

A few nights ago, Garrett and I tried out a new recipe - Rachel Ray's Mexican Lasagna. It was very colorful and fun to cook! You layer it like lasagna but with ground turkey, beans, and corn then use spinach tortillas as the noodle and top it with cheese. It defiantly wasn't as spicy as I thought it was going to be (the recipe called for 2 tablespoons of Chili powder) and we actually ended up adding some hot sauce to it. But it was a delicious meal and I just loved how colorful it was - kids would love it! These pictures don't do it justice!

Rachel Ray's Mexican Lasagna

Ingredients
  • 3 tablespoons extra-virgin olive oil
  • 2 pounds ground chicken breast (I used ground turkey)
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1/2 red onion, chopped
  • 1 (15-ounce) can black beans, drained
  • 1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
  • 1 cup frozen corn kernels
  • Salt
  • 8 (8 inch) spinach flour tortillas, available on dairy aisle of market
  • 2 1/2 cups shredded Cheddar or shredded pepper jack
  • 2 scallions, finely chopped
Directions

Preheat the oven to 425 degrees F.
Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

So fun and easy, probably took about 30 minutes to throw together! Enjoy!

This is Garrett in San Fran. Right after we got married, we drove my car from AL to Seattle and took the scenic route up the California coast and stayed with friends along the way. It was an amazing trip and I hope to do it again in my lifetime!

Adventures in Gardening :: Phase 2

Ever since Garrett and I planted Phase 1 of our garden, we have slowly been planting phase 2 of the garden here and there. A few weeks ago we put the artichokes, onions, carrots, and squash in the ground. Last weekend we planted the tomatoes and I still need to plant the basil, red bell peppers, corn and cucumbers but haven't gotten around to it.

I put together a couple of before and after photos. Amazing how much our little garden has changed within only a month and a half! It's just bursting with life... I can't wait for summertime and tomato + basil + mozzarella sandwiches fresh from the garden!

Progress, a Countdown and some Motivation

Thanks to all of YOU, my wonderful donors! I feel very blessed to have such an amazing support group behind me. Thanks for being there guys, and please keep donating!

The countdown begins: 43 days until my Half Marathon!!! I am feeling very prepared after another successful 9 miler last weekend. I am currently at the end of the "strength phase" of my training program, where we added some hill and tempo workouts. I'm happy to say that I survived and it actually got a little easier as the weeks progressed! At the end of May, we move on to the "Recovery phase" where we will begin to taper or reduce mileage before the big race day.

I thought this clip from Dodgeball was a great motivator (and a good laugh).

Dear GU - Vanilla Bean flavor,

Thank you for pulling my through my 9 miler today. You are my hero. You gave me the fuel I needed around mile 6 to carry on. And your gooey vanilla goodness was as exceptional as ever. The other flavors have nothing on you. Thank you for being awesome.

A Little Slice of Heaven

Last night, I discovered my new favorite treat. Coconut Macaroons. All I can say is they were a little slice of heaven and so simple to make. And the best part is that I had all the ingrediants in my kitchen.

Ingredients:
2 2/3 cups of flaked coconut
2/3 cup of sugar
4 tablespoons flour
1/4 teaspoon salt
4 egg whites
1 teaspoon of vanilla extract


Cooking Instructions:
Preheat oven to 325.
In a small bowl mix together coconut, sugar, flour, and salt. Add in egg whites and vanilla extract. Mix well.
On a baking sheet drop mixture by rounded teaspoon (I used half of an ice cream scoop)
Bake at 325 for 18 to 20 minutes.
Allow to cool on wire rack.
ENJOY your little slice a heaven!

Liam turns 2!

Last Monday my Mom and I were able to make the drive up to Nashville to see, my Nephew, Liam and wish him a Happy 2nd Birthday and spoil him with gifts, of course! He is growing like a weed and turning into a handsome little man! His favorite new toys were his Tonka dumptruck and his bubble maker lawnmower. We had a blast and I'm so glad I got to see this little stinker while I was in town! Enjoy the photos!
